Coming from a Mexican family, the holidays mean food! Food is such an essential part, kind of like having a tree up for the holidays. There’s absolutely no way to narrow down the food we eat. There’s tamales, champurrado, menudo, pan dulce, and so much more. Christmas time holds such special magic and my favorite thing is spending time with family and enjoying all of the blessings we have.

Las Posadas are a great time for families and the community around you and come together and cherish the reason for the season. They’re a really fun Hispanic tradition that still happens to this day! All of my favorite memories are just coming together and eating while laughing at all the crazy memories we’ve made. There’s nothing I love more than sitting in our living room and watching movies while you hear laughter in the background. One of the traditions we have is that we actually celebrate during Christmas Eve and wait until midnight to open our gifts! Christmas Day usually means resting and eating “el recalentado,” which is the funnest way to describe leftovers. That’s something I absolutely love and never want to change.

There’s nothing better than the process of making food while enjoying it with love ones! My mom and I spent a day making pozole and I got to see how she made it happen and now you can try it too! I’ve always wanted to be in the kitchen with my mom so what better way than for her to pass down such a traditional food!

Ingredients
  1. 1 Can of Mexican Style Hominy
  2. 3 Pounds of Chicken
  3. 16 oz. Herdez Salsa Verde
  4. 1 Head of Garlic
  5. 1 Onion
  6. Salt
OPTIONAL TOPPINGS
  1. 1 Chopped Onion
  2. 3 Cups of Cabbage
  3. Radishes
  4. Lemon
Instructions
  1. Grab a put and start by cooking the hominy filled with water on stove top.
  2. During this time, add the chicken with garlic and the whole onion (in pieces) and salt to taste.
  3. Let it cook for up to an hour.
  4. At the hour add the Herdez Salsa Verde and let it on the stove to cook for another 10 minutes.
  5. When ready, serve in a bowl and add chopped onions, cabbage, radishes, and lemon to your liking.
